White Peony, also known as Bai Mu Dan, is a fruity, lush tea with hints of spice and fresh hay. The texture is full, soft, and lends well to the delicate flavors in the tea. This tea is harvested and crafted on Cindy's family lands on Wuyishan, located at 300-500m elevation. 70% of the leaf material is from Cindy's farm, and she purchases an additional 30% of the leaves in the early morning from local farmers in Zhenghe, the town next to Wuyishan. The leaves are then processed in Zhenghe, as the family's on-site facilities are reserved for oolong and black tea. White Peony is handpicked with a careful attention to detail for plucking standards. The quality of the raw material is crucial, as the crafting of white tea is very simple and highlights the purity of the leaves. After plucking, the raw leaves are layered evenly on bamboo baskets outside, to sun-dry in the traditional manner.

Recommended Brewing Instructions: Use 3tsp (~3g) per 250ml cup. Brew for 3 minutes.
- 175F for a smoother, sweeter profile.
- 185F for a stronger, more complex profile.
This tea can be rebrewed up to 5 times, with hotter water and longer infusions.
